As a wife, mother, and homeschool parent, life became challenging when my husband and I discovered, one after the other, that our three children had a multitude of life threatening anaphylactic food allergies. The list of foods our young children could not consume or touch, or be near was astronomical. Many questioned us with disbelief, as if we were making this all up, “How can someone be allergic to so many foods?” We wondered the same thing. From welts and rashes, to runny noses, swollen lips, breathing issues, asthma and scratching endlessly from eczema; we dealt with it all, causing us much fear and worry as we watched our children suffer, not knowing how to truly heal them.

Reactions didn’t always occur from foods. There were environmental allergies, animal allergies and allergies to products. It was never as simple as to eliminate the food allergen from our home, because they were all allergic to different things. It was a case of home engineering and safety. Going out to eat was never an option therefore, I had to teach myself how to cook all over again.

After constant research, countless tests and a myriad of doctors and specialist visits, we soon came to realize, as parents we had to find our own answers because no one had any for us. How does a mother cope with all of this, along with homeschooling and managing a home?

Whilst tending to my children and their food requirements and diets, I neglected my own self care. Through exhaustion and fear, I began to experience major panic attacks. And after receiving perfect test results from my physicians, I realized in order to help my children I had to help myself by providing self care, and this allowed me to help my children even more.

From a cautious and concerned parent to one of faith and confidence, I created protocols, strategies, ideas and recipes that worked for us in the management of the food allergies, allowing my children to thrive and live happy, healthy lives. This is our world. Our journey with food allergies began over two decades ago, and I felt the need to share our story in my published book. I am hoping to bring a greater awareness and understanding about the seriousness of anaphylactic food allergies, and even if the food allergies never go away, with the right tools life can be as fun and as enjoyable as you choose it to be.

Australian born and raised Frances Castelli had five wishes as a child: move to the United States, marry a Beatle, become a teacher, become an artist, and write a book. With the publication of The Kitchen Alchemist: How I Became My Own Food Scientist So My Kids Could Thrive with Anaphylactic Food Allergies, she has manifested all five into reality.

After moving to the U.S. and marrying Ralph Castelli, who played Ringo Starr in Beatlemania and Rain: A Tribute to the Beatles, Frances became a homeschooling teacher and an artist in the kitchen to successfully manage her children’s broad spectrum, anaphylactic food allergies. Thanks to her dedication and creative culinary alchemy, today grown-up sons Anthony and Nat and daughter Hope lead exceptional lives filled with vibrant health, nurturing relationships, and fulfilling careers. She wants parents of allergic children to know that with the right tools, proper management and a rich mindset, everything is possible.

  • The Christmas/ holiday season is the perfect time to let those around you taste treats and foods that you so often bake for your family. Giving them the opportunity to taste foods that are allergy free and can truly be just as delicious, if not more, and many times healthier. Sharing a little taste of our heaven .
Many times substituting an ingredient can really make for a healthier, or safer desert. For example: eliminate eggs for an egg substitute, use coconut sugar instead of white sugar, use fruit instead of sugar, use oat flour instead of wheat flour, use oats instead of nuts. The possibilities are endless. What a gift it is to be creative in your own kitchen.
I have been busy baking and for our family and friends and it continues through till December 25. Cookies, cakes, delectable chocolate deserts fill the little boxes with delivery expected this week.   • Cinnamon rolls for Breakfast! Egg free! I use an egg substitute and self rising flour. And a non dairy buttery spread to layer the dough before placing the cinnamon sugar on top, then rolling it.   • Thanks to Enjoy Life Foods we are able to create our own safe allergy free versions of deserts like our Rocky Road. 
Simple to make, sweet and delicious. You can add dried fruits nuts or anything that takes your fancy Here is what we do.

In a bowl add the following dry ingredients and mix :
1 cup  marshmallows
¼ - ½ cup  shredded coconut
¼ dried cranberries (or more )
1 cup crushed allergy safe graham crackers / cookies 
In a double broiler melt two bags of allergy free chocolate morsels. 
When chocolate has cooled pour over the dry ingredients and combine.

Place mixture on a tray lined with parchment paper, and cool. Allow to set in the refrigerator. When set cut into squares.
